I don't have time to eat healthy. What should I do?
There is no one too busy to focus on their health. It's a great (and common) excuse, and trust me ... I have been there, where I really thought I didn't have the time.
The truth is, there are people with massively more demanding jobs (think: internship for M.D., etc) and I know several personally who can still focus on the "better bad" choices for their health.
Everyone has the same 24 hours each day, so health is a question of what you choose to do with the time.
You can take bars, pack fruit, do many things. You can also lay down a set of rules to make it a healthier work environment, i.e. allocating the time to take a quick meal or break. There are numerous studies that support breaks actually increase productivity, etc, when done correctly. There have been a lot of other great suggestions as well.
While I'm not suggesting this for you, as I gained my health, I realized my job was not serving me by being an unhealthy, negative environment. So I solved the problem. I left it.
